Fennel & Lavender Marinated Castelvetrano Olives
I could enjoy Castelvetrano olives morning, noon and night. They make a perfect accompaniment to cheese and will add vibrant green color to your plate. Thanks to the immaculate location and fertile land, these Sicilian olives are bright and buttery - marinating them will elevate and compliment the flavors. If you're an olive lover, they are wildly addictive!
16 oz Castelvetrano olives
16 oz Castelvetrano olives
1 lemon, zest and juice
1/2 orange, zest and juice
3 cloves garlic, minced
1 1/2 teaspoon California Fennel Pollen
1/2 teaspoon dried lavender
a pinch of fresh cracked pepper and red chili flakes, or to taste
Strain olive brine and toss olives in all above ingredients. Transfer to a glass jar, refrigerate and allow to marinate for at least 12 hours.
